Are you hungry for some comfort food?

This week’s edition of 5 PINS I Love is all about showing love and comfort in the kitchen.

A lot of people are trying to stay away from wheat these days and my family is no exception. Taking the wheat out of our diet has helped improve digestion, leaving us feeling better, less bloated and less cranky. And with gluten-free pastas easy to find, we really don’t miss it at all.

Gluten-Free Mac and Cheese

Mac and Cheese is one of those flexible kind of dishes that depending on what you have on hand you can throw pretty much anything in and it tastes great. Think beer, hemp seeds mixtures, (RA Energy is our fav), sausage, spinach, kale and yes, bacon!

The recipes I’ve pinned don’t take much time to prepare so they are great last-minute options when time is short.

Fat Content

You can easily bring down the fat content in any mac and cheese recipe but I don’t recommend using margarine or anything artificial. Comfort food is meant to be hearty. Paired with a fresh coleslaw or salad and there’s not much guilt here.

    You are so welcome:) And I agree it is tough to reduce the fat as it is what makes it so good. But substituting saturated fat for a vegetable source would work well. I can’t wait to try your dish, we may have it tonight in fact.

    I also do a gluten-free Vegan mac ‘n’ cheese. It’s a bit tougher, because, well, butter, milk and cheese are such a big part of the whole mac ‘n’ cheese experience… This one is made with tofu and nutritional yeast. Daiya cheese also rocks. 🙂
